Pear Sauce

Pear Sauce
Serve over berries, gingerbread or spice cake.
2 medium pears, peeled, cored, and sliced
1 teaspoon grated lemon rind
2 1/2 tablespoons lemon juice
1/3 cup granulated sugar
1 tablespoon cornstarch
1 cup water
Combine first 3 ingredients in blender container; process until smooth. Combine pear mixture, sugar, cornstarch and water in a medium-size saucepan. Bring mixture to a boil; reduce heat, and cook, stirring constantly, for 1 minute. Remove from heat; cool.
Yields 2 2/3 cups.
