Creme Fraiche

1/2 cup sour cream
2 cups whipping cream

Place sour cream in a bowl. Thin sour cream with a little whipping cream, then add remaining whipping cream. Pour mixture into a clean glass jar, cover loosely, and let thicken at room temperature. This takes about 4 to 12 hours, depending upon warmth of room. Cover thickened mixture tightly and refrigerate. Chill completely.

Lime Cr?me Fra?che
Add 1 1/2 teaspoons finely grated lime peel and 1 tablespoon fresh lime juice to each 1 cup of Cr?me Fra?che.
