Ingredients
* 1 bunch spinach, washed and torn
* ½ red or sweet onion, thinly sliced
* 5 mushrooms, sliced
* 3 T. vegetable oil
* 2 T. cider vinegar
* 2 tsp. brown sugar

Method
Place the spinach, onion and mushrooms in a bowl. Whisk together the oil, vinegar and sugar until the sugar is melted, pour over the salad; toss and serve.
