Linda’s Meat Loaf

This is one of the most delicious meat loaves you will ever taste!

1 pound bulk Italian sausage or chorizo
1 pound ground round
20 soda crackers
2 eggs
1 (8 ounce) can tomato sauce
1/4 green bell pepper
1/4 medium onion
1 large garlic clove
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon poultry seasoning

Grind soda crackers fine in a blender or food processor. Mix sausage, ground round, cracker crumbs and tomato sauce very well. Chop bell pepper, onion and garlic clove in food processor. Saut? in 3 tablespoons butter. Add to meat mixture. Sprinkle seasonings over and mix in well. Put into an 11 x 8-inch baking pan or loaf pan and bake at 325 degrees F for 1 hour and 10 minutes.
