Sailor\’s Bread Pancakes

Sailor’s Bread Pancakes
4 slices day-old bread, crumbled
2 tablespoons flour
1 teaspoon baking powder
1 teaspoon sugar
1/4 teaspoon vanilla extract
2 eggs, separated, whites beaten
1 cup scalded milk
3 tablespoons butter
Put bread in bowl. Add flour, baking powder, sugar, butter and vanilla extract. Pour hot milk over all. Add egg yolks. Fold in fluffy egg whites. Cook on hot griddle.
Serve with maple syrup.
